Valentine Celebration

I hope everyone had a wonderful Valentine’s Day.  Ours was very nice – pretty laid back but perfect. After all my hype about great ideas for Valentine’s Day – what did I do?  Well, I really did get Jared that cool ‘First Kiss’ print…but I still need to frame it (oops).  AND  I made him this fantastic dessert I saw on pinterest the other day…Banana Split Brownie Pizza!

I modified mine slightly since I didn’t have the right kind of pizza pan…I just used a rectangular pan.

It was DELICIOUS!  It didn’t even feel like you were eating anything bad since there’s so much fruit on it.

I purposely left off the coconut because Jared doesn’t like coconut, but I accidently forgot the chopped nuts…next time!

So…I just put the recipe into the Weight Watcher’s Recipe builder and if you cut it into 20 pieces…it’s not bad for you – and cutting it into 20 pieces is NOT unreasonable….

Ingredients


8 oz Neufchâtel cheese   


20 oz Del Monte Crushed Pineapple In Its Own Juice, drain juice   


2 large banana(s), slice   


1 cup(s) strawberries, sliced   


1/2 cup(s) mini marshmallows   


4 Tbsp Hershey’s Sugar Free Syrup   


20 item(s) maraschino cherries   


16 serving(s) Betty Crocker® Brownie Mixes Dark chocolate fudge brownie, prepared, bake as package indicates in a 9 x 11 pan   

Instructions

  • Bake brownies as instructed. While baking mix the drained crushed pineapple with the cream cheese. Once brownies have cooled spread the cream cheese mixture over the brownies. Top with fruit, marshmallows and chocolate. This could easily be modified to less points by eliminating the marshmallows and chocolate and would still taste yummy. Also – it is a super refreshing treat with a yummy brownie underneath!
